Ignore them they're useless. I've had 27C and 29c shown and we've had nothing anywhere near that.

From my experience they tend to read wrongly (far too high if left in sunshine) when the car is first started, but after driving for 10 minutes or so they settle down, stabilise and give quite an accurate reading. Several times I've seen a sudden drop from 3 or 4C to 0C driving through a rain shower which turns to sleet or snow, and learnt where the local frost hollows are courtesy of my trusty dashboard. Today it was a steady 22-23 in the afternoon, it would read 25 when stopped for a while but soon settled down afterwards.
